Sunday Brunch Recipe: Treat Yourself to Something Special in just under 10 minutes!

One- Bowl Maple, Butter- Pecan Pancakes

 

 

Ingredients:

 

1 cup All Purpose Flour

2 tablespoons Light Virgin Olive Oil

1.5 tablespoons castor sugar

1/2 teaspoon Salt

1 teaspoon baking powder

1 large egg

2 teaspoons pure vanilla extract

 

(Makes 8)

 

Method: 

Combine all ingredients in one bowl and whisk until combined.

 

Use a small drop of olive oil to lubricate a large frying pan, bringing it up to med-high heat. 

 

Spoon batter in to create desired size pancake and at the first sign of air bubbles, flip!

 

Cook each pancake for approx. 1 minute per side.

 

Serve with Maple syrup, honey and plain greek yoghurt/ dairy free coconut yoghurt.
